What are the differences between beef, deer, and elk meat?


Does elk meat, which is called « venison », have as much calories and proteins as beef meat? 

Elk venison is a dark red no-fat meat. This means it is healthy. Actually, elk meat has much less calories than beef, and contains more iron and proteins than any other kind of meat sold in the province of Quebec.

Does elk venison have the same wild taste that deer meat has?  

When you hunt game animals during autumn, you might find it has a “wild” taste. This is caused by two factors. First, game animals feed on conifers, which can give a bitter taste to meat. Second, autumn is the game animals rutting season, and males have a high quantity of sexual hormones in the blood during that period. However, the females’ meat taste the same each season.

As for the elk raised on our farm, he does not eat conifers, and we do not send males to the butcher’s during autumn. This way, we can assert that our elk, even though it has a dark red meat that is similar the wild deer’s, he does not at all taste like the deer of your autumn hunt.
