Beer Roast Elk


  • 1 roast of 3 to 4 lbs.
  • 1 sliced onion
  • ½ cup chili sauce
  • 2 tbsp. brown sugar
  • 1 garlic clove
  • 1 ½ cup beer, more if necessary


Place the roast in a dish of 9 x 13 inches. Cover with onion slices. In a bowl, mix the chili sauce, the brown sugar, the garlic and the beer. Pour on the meat. Put a lid and cook in a 350º F oven for 3 ½ to 4 hours. The leftovers will be delicious when sliced in sandwiches with BBQ sauce.
